Smoky Berry & Cream Trifle
A layered English classic reimagined with artisanal spirit and bold summer berries.
The Story Behind the Sweet
Every Southern table has its crown jewel, and for many of us, the trifle is that magnificent centerpiece that signals a true celebration. It's a dessert defined by its layers—much like the recipes we've passed down through generations. This particular trifle was inspired by the long, humid summers in the South, where cool, creamy textures were the only way to end a day spent around a roaring smoke pit.
We wanted to craft a version that balanced traditional indulgence with a hint of something unexpected. By incorporating the subtle warmth of our Eagle signature spices into the custard base, we created a depth of flavor that cuts through the sweetness of the fruit and cream. It's a reminder that even the most classic desserts can benefit from a bold, artisanal touch.
Whether you're serving this at a family gathering or a weekend barbecue, this Trifle is designed to be shared. It's more than just a recipe; it's a tribute to the craftsmanship we put into every spice blend and sauce we create. Take your time with the layers, let the flavors meld, and enjoy a taste of Southern heritage refined for the modern chef.

Prep Your Ingredients
Before you begin, gather all of your fresh components and necessary tools for assembly. Having everything staged ensures a smooth building process for this premium Southern dessert.
Prepare Fruit and Cake
Slice strawberries and sprinkle with sugar if needed. Cut bananas and toss in orange juice to prevent browning. Mix pudding with milk until smooth, then cube the cake into 1-inch pieces.
Build the Base Layers
Use half of the cake cubes to line the bottom of a large glass bowl. Carefully layer half of the strawberries followed by half of the blueberries, and then add half of the banana slices.
Add Pudding and Repeat
Spread half of the pudding over the fruit layer. Repeat the layers with the remaining cake, strawberries, blueberries, and bananas in the same order to create the signature trifle appearance.
Whip, Garnish & Chill
Beat heavy cream in a chilled bowl until soft peaks form. Spread over the final layer. Garnish with almonds and cherries. Chill for at least 30 minutes in the refrigerator before serving to ensure the flavors meld perfectly.
Chef’s Recommendation
Best Way to Serve
For the ultimate experience, serve chilled in individual crystal glasses. The layers remain distinct and elegant, making every spoonful a perfect balance of smoky berry and cream. Any fruit will do and recomend adding fruit flavored Jello to the bottom layer
Suggested Toppings
Elevate the texture with a sprinkle of crushed honeycomb or fresh mint leaves.
Eagle Spice Pairings
Dust the top layer with our Eagle Citrus Blend. The mild chili kick and dark chocolate undertones amplify the smoky berry profile without overwhelming the delicate cream.
