Directions

1

Preheat your grill or smoker to 350°F (175°C). Use indirect heat for the most even cooking.

2

With a sharp knife, cut through the skin and tendons around the thin end of each drumstick, about 1 inch from the joint.

3

Push the meat down towards the thicker end, exposing the bone to create the 'lollipop' shape.

4

Remove the excess joint cap if desired to allow the bone to stand flat on a plate or grill grate.

5

Season the chicken meat generously with Eagle All Purpose Seasoning, ensuring every surface is coated for maximum flavor.

6

Wrap each chicken lollipop tightly with a strip of bacon, starting from the base of the bone down to the bottom. Secure with a toothpick if necessary.

7

Place the lollipops on the grill, bone-up if possible, or flat. Cook for about 20–25 minutes until the bacon starts to crisp.

8

Brush each lollipop lightly with a thin layer of Eagle Citrus Seasoning or a splash of fresh lemon juice during the final 10 minutes.

9

Continue cooking until the internal temperature of the chicken reaches 175°F (80°C). This ensures the dark meat is tender and the bacon is fully rendered.

10

Rest for 5 minutes. Serve with fresh lemon wedges and a generous side of cool tzatziki for dipping.
